Classification: Red wine IGT TOSCANA
Vineyard:
Density: 6,600 vines / ha
Development: Cordon Royat
Soil: sandy-silty, orientation south / south-west
Date of planting: between 1990 and 2009
Quantity: About 45 hl / ha
Vinification: Hand-picked with systematic selection both in the vineyard and on reception of the grapes in the cellar. Fermentation is in steel tanks with prior cold fermentation (10°C) over 2-4 days. At the beginning of the fermentation the cap is manually pushed down, then only wetted several times a day. The fermentation process lasts about 12-15 days. Malolactic fermentation: 55% in new barrique barrels and 30% in steel tanks. Development: 16 months “on the yeast” and 9 months in bottles. Only one filtration before bottling.
Degustation:
Empyreumatic nose (smoke, roast flavor...) with a hint of spice. The body and the volume harmonize with the tannins, who are still a bit tough. The wine is already pleasant to drink, but in the bottle it will gain in flavor and smoothness with the time.
Optimal drinking temperature 17° to 19°C.
Storage life: 6 years and more
