Red wine, whose name is inspired by Béjart’s ballet to Ravel’s music.

Vinification:
Hand-picked with systematic selection both in the vineyard and on reception of the grapes in the cellar. Fermentation is in steel tanks with prior cold fermentation (10°C) over 2-4 days.
At the beginning of the fermentation the cap is manually pushed down, then only wetted several times a day. The fermentation process lasts about 12-15 days.
Malolactic fermentation and maturation are for the most part in new and one-year old barrique barrels for 12 months. The rest is in steel tanks, maturation “on the yeast”. The barrique barrels are changed without pumps in free fall, no fining, no filtration.
Degustation:
Lovely fruity nose (apricots, ripe fruits) with a hint of spice. It has pleasantly full-bodied characteristics, the fruity aromas remain.
The Merlot brings the full flavour and the volume, the Cabernet Sauvignon the tannin and the character.
Optimal drinking temperature 17° to 19°C.
